APALTAGUA CABERNET SAUVIGNON RESERVA - 2018 - 0,75L - CHILI
The Cabernet Sauvignon Reserva is a complex and elegant wine that displays notes of cassis, peppers and ripe strawberries. In the mouth it is elegant and full-bodied, spicy with round fruit and gentle tannins, which are rounded off by subtle oak and vanilla tones.
The vines of the Cabernet Sauvignon Reserva are located in Apalta in the heart of the Colchagua Valley. Due to the relatively cool and windy climate, the grapes ripen a bit slower, so that the grapes are only read by hand in April in the optimal state of ripeness. This is followed by a so-called cold maceration for 3 days. The grapes are cooled to below 8 degrees. The must can take on a maximum of color pigments and flavors before the actual fermentation begins. Then the wine is fermented for 7 days in a stainless steel tank at temperatures between 28 and 30 ° C. After that, the wine may be allowed to stand for 10 more days on the mash to extract more fruit flavors before it is removed. After that, 50% of the wine is aged in oak barrels for 6-8 months, while the remainder remains in the steel tank. After bottling, the wine may still be aged for 6 months in the bottle.
