Winemaker’s Comments
Cabernario has a deep purple color, notes of blackberry, blackcurrant and hints of bread crust and sweet spices. Concentrated mouthfeel with soft round tannins given by its aging of 10
months in oak barrels.
Climate and Soil
Sub- humid Mediterranean climate, with an annual average rainfall of 400 mm, concentrated in winter. Warm and dry summers, with great thermal oscillation between day and night. In this strip of land, located at the foothills of the Andes, night temperatures tend to be lower because of cold air that flows down from the mountains, causing a daily thermal oscillation that can exceed 17°C. The rocky subsoil ensures good drainage of rainwater and stimulates good root development.
Vineyard
The vineyard is a massal selection, 100% ungrafted Cabernet Sauvignon planted in 1964. The grapes produced by these old vines are concentrated needing minimum winemaking interventions, delivering an
elegant and bold Cabernet Sauvignon. Cabernario is made on the vineyard not
in the cellar.
The expressive flavors are given by the low yields per vine and it’s long roots that travel through many different layers of soil.
Vinification
The harvest of the grapes was done by hand during the night starting on 13 th until 23 rd April. The 2016 vintage allowed for ideal ripening resulting in fresh and well-balanced grapes, having ripe tannins and some very pure flavours. A cold soak of 10 days was done. Alcoholic fermentation took place in small stainless steel tanks using selected yeasts with temperatures ranging from 28-30° C. The extraction programme was done using pump overs and delestage decided daily by tasting. Once dry, the wine was kept with its skins for an extra 8 days prior draining. The total skin contact was of 30 days. The skins were pressed using a basket press. The winewas aged, blended and further aged in barrels for 10 months using 30% new French oak barrels gaining balance, complexity and elegance. The wine was
bottled without filtration and then aged in bottle for 6 months prior it’s release to the market.
