THE NAME RON COLON
In the early 16th century the Spanish conquistador Pedro de Alvarado named the newly discovered province of El Salvador (which translates directly to "The Savior") after Jesus Christ.
In 1892 the government of President Carlos Ezeta decided to call the Salvadoran peso "Colón"; in homage to Christopher Columbus. The colón remained the currency of El Salvador until 2001 when it was replaced by the US dollar.
We pay homage to the old “Colónes” banknotes and currency in our bottle labels and the unique coin that is placed in the cap of each bottle. The coin can be jumped off and collected.
"COFFEE INFUSION"
The Ron Colón Salvadoreño enriched with coffee is made with bourbon coffee beans from the El Ciprés region, grown at an altitude of 1700 m next to El Salvador's famous Santa Claus Ana Vulkan. Bourbon coffee beans have a nice buttery sweetness. The beans are dried using the natural process; Twisted consistently by hand to ensure they dry evenly over a period of four weeks. So slow
The process allows the bean to interact with the natural sugar of the cherry (the fruit around the bean) over a long period of time to give the final bean more fruit flavor. The natural process brings out more intricate and funky fermented flavors, perfect for pairing with rum.
Once dry, the cherries are discarded and the remaining beans are shipped to the Jags Head Coffee Roastery in North Carolina. The head roaster Andres uses a medium roast for the beans, which gives a rich chocolate flavor with notes of cherry and a bit of bitterness. The beans are then peeled off to be cold macerated in Ron Colón Salvadoreño Dark Aged Rum for 48 hours. This gives the coffee beans enough time to release their rich cherry, chocolate, and honey into the rum to taste. The liquid is filtered uncooled to store the coffee oils.
RECIPE
• 6 year old column distilled Salvadoran rum made by Licorera Cihuatán distillery.
• Un aged pot distilled Jamaican rum made by distilleries in Worthy Park, Hampden and Monymusk.
• 3 year old Jamaican pot distilled rum made by Worthy Park Estate.
• All rums in the mix are aged at the source.
PROCESS
The local sugar cane is fed through a centuries-old mill and converted into molasses. The molasses is fermented with special yeasts for 36 hours and then distilled in a modern multi-column distillate. After the distillation, the rum matures in former bourbon oak barrels next to rums that the Licorera Cihuatán distillery has been producing since 2004. The rums aged in Licorera Cihuatán have an angel content of around 8% per year.
The master distiller and mixer is Gabriella Ayala.
BLEND
The rums we selected for our blend create a complex palate. By combining column distilled and pot distilled rum, the entire flavor is offered with contrasting properties that interact to create something very special.
DESTILLERY IN EL SALVADOR
The Salvadoran rum is a fruity, delicate style with a light, dry finish. The addition of Jamaican pot distilled rums brings earthy and warm funk into the liquid.
AROMA
On the nose, the aromas of tropical fruits are most evident with fresh banana and sticky pineapple. There is also a deeper aroma of rich raisins and plums.
TASTE
The palate brings the same tropical fruity notes but with an evolving toasted warm spicy caramel flavor. Balanced with creamy milk chocolate, roasted notes of almonds and dried chewy apricots.
BOTTLES
Ron Colón is first bottled in the Netherlands. This decision was made due to the complexity and risk of bottling in El Salvador due to the political situation there. However, we have a bottling partner for Ron Colón in El Salvador, with whom we will work in 2021 when we are all under control.
PACKAGING
We decided early on that RCS would be the liquid, hence the choice to stay away from fancy custom mold designs and opt for the cheapest glass solution in the industry. It is important to know that wine bottle glass is 100% recyclable and it can be recycled endlessly with no loss of quality or purity.
In the labels and closures we have brought the colon currency back to life through our own designs.
